Situated in the Quai aux Barques in a stone manor comprising a wing dating back to the 17h century and another wing that could well be the oldest part in this house in Brussels -- the convent of St Croix that dates back to the 15th century. Playing with the marvellous original architecture and a very contemporary style, which was specially adapted with an open plan kitchen for the public to view Gaeten Colin at work.
It is an ideal place for the master to blend meticulously the flavours and textures that tease and delight the plalates of his aficionados, limited to a maximum of 25 people. The menu reflects the flavours of the market and are transformed according to the appetites and desires into for 4, 6 or 9 dishes. The same approach applies to the wine with the rigorous selection of certain crus that are suggested to accompany certain dishes.
