Brussels Sprouts
These are often the nightmare of children but the delight of adults. This variety of cabbage, which resembles little rounded heads, indeed has a somewhat marked taste. Winter vegetables, they are cooked for 15 minutes in salt water then braised in a buttered saucepan. Sprinkled with freshly grated nutmeg, sprouts should be eaten with a piece of meat.
