The wild Canadian sablefish (also called Blackcod, although it is unrelated to the cod family) is a distinctive deep water species combining dark, almost furry skin with pearly white flesh. It is fished sustainably in the cold and deep waters of the Northern Pacific Ocean.
Sablefish boasts a smooth, luxurious texture and a sweet, mild and nutty flavour - the results of its high oil content (rich in Omega-3). Canadian wild sablefish offers a unique mouth and palate appeal much sought after by discriminating chefs and consumers.
