The Restaurant by Pierre Balthazar is, first and foremost, an original gourmet concept. There is no traditional menu, but instead a range of nine products that evolve according to the season. These choices can be prepared in a French, Thai, or Spanish style. Pierre Balthazar, major Belgian chef who made his name at the Sea Grill before managing the cuisine at the European Council, is surrounded by three top-notch and creative chefs in The Restaurant by Pierre Balthazar: Macarena de Castro from the restaurant Jardin* at Alcùdia, Michaël Fulci, chef at Terraillers* in Biot-Cannes, and Oth Sombath from the Thai restaurant Aux Trois Nagas in Paris.
At The Restaurant by Pierre Balthazar, each chef provides an interpretation of each of the 9 products. Once you see your place, you will understand the masterpieces they create. Depending on the mood and decision of the chef, your king scallops could be raw or cooked, accompanied by a delicious citrus fruit bouillon or a perfectly seasoned cauliflower purée.
